Ingredients:

Directions:

  1. Heat the oil in a large skillet over moderately-high heat until hot but not smoking. Add the ground turkey and using a wooden spoon, break up into crumbles.
  2. Cook turkey until done.
  3. Season with salt and pepper.
  4. Add the stock and scrape up any bits on the bottom of the pan.
  5. Bring to a boil, and let simmer until slightly reduced, about 10 minutes.
  6. Stir in the spinach and cannelini beans and heat through.
  7. Season with salt and pepper, a second time, if desired.
  8. 3/4 c cheddar cheese, no fat, see not below.
  9. This can be served over noodles or brown rice. I eat it plain and add cheddar cheese to it.
