This is a great recipe for those that are following a low carb or fat diet. I know the stats on this recipe will be high because the data base does not allow for low-fat or no fat items, at least in most cases it doesn't.
Ingredients:
1 tablespoon garlic-infused olive oil
1 lb ground turkey
salt, to taste
pepper, to taste
2 cups chicken broth, 99% fat free
1 (5 ounce) package spinach, triple washed
1 (15 ounce) cannellini beans, drained
Directions:
1. Heat the oil in a large skillet over moderately-high heat until hot but not smoking. Add the ground turkey and using a wooden spoon, break up into crumbles.
2. Cook turkey until done.
3. Season with salt and pepper.
4. Add the stock and scrape up any bits on the bottom of the pan.
5. Bring to a boil, and let simmer until slightly reduced, about 10 minutes.
6. Stir in the spinach and cannelini beans and heat through.
7. Season with salt and pepper, a second time, if desired.
8. 3/4 c cheddar cheese, no fat, see not below.
9. This can be served over noodles or brown rice. I eat it plain and add cheddar cheese to it.
