Tuna Croquettes With Lemon Caper Sauce

Ingredients:

  1. CROQUETTES
  2. Place the tuna, onions, pepper, mustard, eggs, lemon juice, salt, pepper, parsley, Old Bay, and 1/4 cup of the Italian bread crumbs into a medium mixing bowl and mix by hand to combine.
  3. Sprinkle in more bread crumbs if needed for patties to take form.
  4. Divide the mixture into 8 rounds and set aside on a parchment lined half sheet pan.
  5. Allow to rest for 15 minutes. (An important step...due to the lemon juice the mixture is somewhat wet).
  6. Place the Panko bread crumbs into a pie plate.
  7. One at a time, coat each round in the panko on all sides.
  8. Heat enough olive oil to cover the bottom of a 12-inch saute pan over medium heat until shimmering.
  9. Add the croquettes and cook 2 to 3 minutes on each side or until golden brown.
  10. Remove to a cooling rack set over a half sheet pan lined with paper towels.
  11. Allow to cool for 2 to 3 minutes before serving.
  12. LEMON CAPER SAUCE
  13. Stir all ingredients together
  14. (lite mayo and sourcream can be used)
