Ingredients:

  • 2 large eggs
  • 1 can crushed pineapple in juice- drained very well- juice reserved
  • 1/2 cup slivered almonds
  • 3/4 cup sifted powdered sugar

Directions:

  1. Preheat oven to 350
  2. Combine cake mix, evaporated milk and eggs
  3. Beat on low 2 minutes
  4. Stir in 1 cup pineapple
  5. Pour batter into 13x9 pan
  6. Sprinkle with almonds
  7. Bake 30-35 minutes
  8. Combine powdered sugar and 2T pineapple juice
  9. Mix until smooth
  10. Spread over warm cake
  11. Sprinkle with coconut and remaining pineapple
  12. Cool completely before serving.
