Traditional Rice Custard

Ingredients:

  • 3 eggs
  • 1/3 cup caster sugar
  • 2 1/2 cups milk
  • 1/2 cup cooked rice
  • you can also add sultanas if desired... but sultanas arent a favourite of min so i prefer it without them...
  • 1/4 cup sultanas

Directions:

  1. Whisk eggs, sugar, essence and milk in medium bowl.
  2. Stir inrice and sultanas.
  3. Pour mixture into 4 ovenproof dishes ( 1 cup capacity).
  4. Place dishes into baking dish, add enough water to come halfway up sides of dishes.
  5. Bake in moderate oven for 35 mins.
  6. Sprinkle custard lightly with cinnamon, bake further 15 minutes or until just set.
  7. Serve warm or cold with ice-cream, if desired.
