Ingredients:

  • 1 cup of unsalted butter
  • 1 cup of finely chopped celery
  • 1 cup of finely chopped onion
  • 1/2 cup of flour ( all purpose)
  • 2 large cans of whole pealed tomatoes
  • 3 to 4 bay leaves
  • 1 lb of crab meat
  • 1 8 oz container of raw oysters
  • 1 lb of fish filet cut into bite sized piece (snapper works well)
  • 4 tbsp of salt
  • 3/4 tbsp of ground black pepper
  • 2 dashes of cayenne pepper
  • hot sauce to taste
  • 2 cups of long grain rice

Directions:

  1. Dice celery and onion
  2. Cube fish filet
  3. Melt butter in a 5 Qt stock pot over med heat
  4. Add celery and onion and saute until lightly browned
  5. Sprinkle in flour and cook til a rich dark brown ( this may take awhile)
  6. Squeeze tomatoes to break them up a bit
  7. Blend in liquid, tomatoes, and cayenne pepper
  8. Simmer 30 minutes
  9. Add bay leaves, shrimp, crab, fish, oysters, and okra and continue cooking over low heat for 20 minutes
  10. In a seperate pot boil rice until tender and drain.
  11. Spoon rice into individual bowls and ladle gumbo on top.
  12. Add hot sauce to taste and enjoy
