Tomato Rice Soup

Ingredients:

  • 445 g tomatoes
  • 1 medium bell pepper
  • 1/8 cup celery
  • 1/8 tsp pepper
  • 1/2 tsp salt
  • 1 tsp parsley
  • 1 clove of garlic
  • 75 g rice

Directions:

  1. Bring tomatoes, stock, celery, pepper, cherry tomates and onion and seasonings to a boil in a large saucepan.
  2. At this point you can either blitz it with a blender or leave it chunky ( I prefer blitzed)
  3. Add rice and reduce the heat to a simmer.
  4. Cook for 25 minutes or until rice is tender.
  5. Taste and add more salt and pepper to taste.
  6. Serves 4.
