The Godmothers Fruit Loaf (No Eggs)

Ingredients:

  • 2 cups sultanas
  • 1 cup raw sugar
  • 1 cup water
  • 100 g butter
  • 1 tsp lemon zest
  • 2 cups plain flour

Directions:

  1. Grease and line tin.
  2. Put sultanas, sugar, water and butter in a saucepan and bring to boil.
  3. Simmer uncovered for 5 minutes.
  4. Stir in lemon rind and vanilla.
  5. Mix in flour and baking soda.
  6. Mix well and bake 40 minutes 170-180 degrees.
  7. Leave until next day.
