Sweet Potato Spoon Bread

Ingredients:

  • 2 large sweet potatoes or 2 large yams
  • 1/2 cup butter or 1/2 cup margarine
  • 1 tsp cinnamon
  • 1 1/2 tsp allspice
  • 1 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 3 tbsp sugar
  • 5 tbsp flour
  • 2 eggs

Directions:

  1. Preheat oven to 425 degrees. Peel, boil and mash sweet potatoes.
  2. Mash in butter. Stir in all other ingredients except eggs.
  3. Beat eggs separately, while sweet potato mixture cools slightly.
  4. Add eggs and mix thoroughly.
  5. Grease a loaf pan and pour mixture into pan. Bake for 30 minutes.
  6. Serve hot . Serves 4.
