Sweet Potato Balls

Ingredients:

Directions:

  1. Cook the sweet potatoes then peel and place in large bowl.
  2. Add sugar - more or less to taste.
  3. Add 1/2 stick butter and mash the potatoes.
  4. Add the vanilla and cinnamon.
  5. LET COOL COMPLETELY
  6. Shape a small amount of the cooled sweet potato mixture around a marshmallow until it's about the size of an egg.
  7. Roll in crumb mixture(graham crackers or vanilla wafers)
  8. Place in greased casserole dish so sides are NOT touching each other.
  9. Bake at 350 degrees F for about 12 - 15 minutes.
  10. WATCH CAREFULLY - DON'T LET THEM GET TOO BROWN!!
