Ingredients:

Directions:

  1. Peel and parbboil whole onions with ends attached until barely tender. Or, if onions are jumbo, cut in half and stem, cut side down until barely tender.
  2. Remove onions and trim ends so onions will sit flat.
  3. Scoop out most of inside leaving several layers of shell, reserve scooped out onion.
  4. Mince scooped out onion,bell peppers, celery, andouille and garlic and saute in butter until soft.
  5. Add a few tablespoons of bread crumbs until mixture holds together.
  6. Add a dash of sherry.
  7. Add breadcrumbs, if necessary to get correct constency.
  8. Stuff into onions, dot with butter, top with cheese and bake in 300 degree oven for about 30 minutes. Can be made ahead, refrigerated and baked before serving.
