Strawberry Snowbank Pie

Ingredients:

  • 1 quart strawberries
  • 1 1/4 cups sugar
  • 1/2 cup water
  • pinch salt

Directions:

  1. Wash, hull and drain berries. Fill pie shell with whole, unsweetened berries. Put the prettiest berries in the center.
  2. Mix sugar, water and cream of tartar in saucepan. Cover and bring to a boil. Uncover, and cook until syrup spins long threads (240 degrees on candy thermometer).
  3. Stiffly beat egg whites and salt them. Gradually pour sugar mixture into egg whites, beatting constantly. Beat until mixture piles into peaks. Add almond extract.
  4. Pile egg white mixture onto pie, leaving center uncovered. Cool. do not put into refrigerator
