Strawberry - Pecan -cake

Ingredients:

Directions:

  1. Preheat oven 180c / Gas 4
  2. Generously grease and flour 3, 8 or 9 inch round layer pans
  3. Mix cake mix with strawberry flavored gelatin. Add eggs, coconut, and milk, and beat well until well blended
  4. Stir in 1 cup of mashed strawberries and 1 cup of pecans
  5. Bake for approx 35 minutes, or until when lightly touched with finger it springs back.
  6. TO MAKE ICING
  7. Cream together cream cheese and butter, mix in the vanilla and the powdered sugar until a firm but spreadable consistency is achieved
  8. Stir in drained strawberries and pecans
  9. Drizzle cooled layers with reserved juice then spread with a layer of icing
  10. Ice sides and top
  11. Refrigerate
