Ingredients:

Directions:

  1. In a pot, pour in olive oil and saute the onions still soft. Add salt.
  2. Add the split peas and water and stock cube.
  3. Simmer for 25-30 minutes or until the peas are cooked through
  4. Ladle 1/2 cup full of the peas into a bowl and set aside.
  5. Using a stab mixer or blender, puree the pea mixture till smooth
  6. Add the reserved pea mixture and lemon juice.
  7. If soup is too thick, add a little more water.
  8. To serve, ladle into a bowl. Drizzle with olive oil and add croûtons.
  9. Lightly sprinkle a pinch of paprika.
