Spinach Cheddar Muffin

Ingredients:

  • 1 cup flour
  • 1 cup cornmeal
  • 3/4 tsp salt
  • 10 oz. spinach
  • 2/3 cup milk
  • 2 tbsp lemon juice
  • 3 eggs
  • 1/4 cup sugar

Directions:

  1. Preheat oven 375°F.
  2. Mix milk and lemon juice (or use buttermilk)
  3. Put flour, cornmeal, spinach, cheese, milk mixture, and egg yolks.
  4. Whip the egg whites until soft peaks form. Gradually add sugar, beating until stiff peaks form.
  5. Fold the beaten whites into spinach mixture.
  6. Spoon batter into 12 muffin cups.
  7. Bake 18 - 20 minutes, or until toothpick inserted in center comes out clean.
