Spinach and Orange Salad

Ingredients:

  • 2 large oranges
  • 1/2 bunch spring onion
  • 1 tbsp lemon juice
  • 1 tsp honey

Directions:

  1. Remove the peel and pith from 2 large oranges and cut out the segments. Do this on a plate to reserve any juice.
  2. Cut 1/2 cucumber in half lengthways and slice mix with baby spinach. Add the sliced spring onions and oranges. Whisk the orange juice lemon juice, honey and mustard. Just before serving add dressing to the salad.
