Spicy Roasted Chickpeas

Ingredients:

  • 1 (15 oz) can chickpeas
  • 3 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 3/4-1 tbsp chili powder
  • 1/8-1/4 tsp cayenne pepper

Directions:

  1. Preheat oven to 400 degrees.
  2. Rinse chickpeas in colander; drain well, shaking to remove as much water as possible.
  3. Combine chickpeas, olive oil, salt and pepper in baking pan large enough to hold chickpeas in a single layer.
  4. Bake 15 minutes or until chickpeas begin to brown, shaking pan twice to brown evenly.
  5. Add chili powder and cayenne to taste; bake an additional 5 minutes or until dark golden-red.
  6. Serve with lime wedges.
