Spicy Mandarin Muffins

Ingredients:

  • 1 (11 oz) can of mandarin oranges, drained, cut in 2 or 3 pieces
  • 1 1/2 cup of sifted flour
  • 1/2 cup of sugar
  • 1 3/4 tsp of baking powder
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1/4 tsp of allspice
  • 1/2 cup of milk
  • 1/4 cup of sugar
  • 1/2 tsp cinnamon
  • 1/4 cup of melted butter

Directions:

  1. Drain mandarin oranges thoroughly. In a large bowl, combine dry ingredients. Cut in butter until the mixture resembles coarse crumbles. Add milk and egg, stir until dry ingredients are barely moistened. Gently stir in the oranges. Divide batter between 12 well greased muffin cups. Bake at 350 degrees for 20 minutes.
  2. Cool on a wire rack.
  3. Combine remaining sugar, cinnamon. While hot dip the tops of the muffins in the melted butter and then roll the muffin top in the sugar mixture.
