Spicy Banana Fritters (Zitumbuwa)

Ingredients:

Directions:

  1. Measure, sift and mix all dry ingredients.
  2. Combine milk and egg yolk, add to dry ingredients.
  3. Fold in the mashed bananas, egg white and pine nuts.
  4. Batter should have consistency to be dropped by teaspoonful in hot oil.
  5. Pour enough oil into skillet to a depth of 1 inch.
  6. Test heat of oil[approximately 375°].
  7. Drop by spoonfuls as many as pan will hold.
  8. Turning as it browns,cook about 5 minutes.
  9. Drain on paper towels.
  10. Sprinkle with cinnamon and sugar, keep warm and just before serving top with ice cream.
