Spiced Peanut & Sweet Potato Soup

Ingredients:

Directions:

  1. Stir together sour cream & lime zest, set aside.
  2. Melt butter in large soup pot. Add onions, garlic- saute 5 minutes.
  3. Add potatoes & stock.Season with cumin, chili, & ginger- bring to boil.
  4. Reduce heat to low, cover & simmer- 15-20 minutes.
  5. Puree using an immersion blender.
  6. Whisk in peanut butter, heat through. Stir in lime juice & salt.
  7. Dollop with sour cream mixture. Top with chopped tomato & cilantro.
  8. Serve!
