Southwestern Warm Potato Salad

Ingredients:

Directions:

  1. Quarter potatoes and boil until tender.
  2. Meanwhile peel and mince garlic and place in a small jar.
  3. Wash and dry the parsley then cut stems off and mince.
  4. Place in jar with the garlic then add oil, vinegar, Tabasco, nutmeg, salt and pepper.
  5. Screw lid on the jar and shake vigorously to dissolve the salt.
  6. Drain potatoes and when cool enough to handle slice them thinly onto a serving platter.
  7. Drizzle with dressing and serve hot, warm or cold.
