Ingredients:

  • 1/2 cup oil
  • preferably a cast iron skillet or non stick

Directions:

  1. PEEL POTATOES AND RINSE TO CLEAN
  2. CUT INTO SEMI THICK FRY CUTS
  3. ADD BLACK PEPPER
  4. HEAT OIL IN SKILLET
  5. ADD POTATOES TO SKILLET
  6. LET FRY ON MEDIUM HIGH HEAT FOR ABOUT 10 MINUTES
  7. ADD LID
  8. COOK FOR ABOUT 10 MINUTES
  9. ADD ONION
  10. AND TURN POTATOES
  11. REPLACE LID
  12. COOK FOR ABOUT 10 MORE MINUTES UNTIL POTATOES START TO SMOTHER DOWN
  13. TAKE LID OFF AND LET POTATOES BROWN SOME
  14. DO NOT LET POTATOES STICK (IF YOU ARE USING A GOOD SKILLET, THIS SHOULD NOT BE A PROBLEM).
  15. WHEN POTATOES ARE DONE ADD SALT TO TASTE
  16. POTATOES ARE DONE WHEN VERY TENDER
  17. DURING THE COOKING PROCESS, YOU CAN TURN THE HEAT UP OR DOWN IF NEEDED
  18. YOUR POTATOES SHOULD LOOK LIKE MY PICTURE
  19. WHEN DONE CAN TOP WITH DICED GREEN ONIONS OR YOU CAN COOK WITH GREEN ONIONS.
