Ingredients:

Directions:

  1. For crust: Position rack in centre of oven and preheat to 350 degrees F (175C).
  2. Line 9 inch square baking pan with foil, extending 1 inch above 2 sides of pan to use as handles later.
  3. Butter 2 uncovered sides of pan.
  4. Combine flour, icing sugar and salt in processor.
  5. Add butter and cut in, until grainy.
  6. Add vanilla and process until dough just starts to come together.
  7. Press dough evenly into prepared pan.
  8. Bake until golden-brown, about 25-30 minutes.
  9. Meanwhile prepare topping: Whisk eggs and sugar in medium bowl to blend.
  10. Whisk in lemon juice and all purpose flour.
  11. Strain into another bowl.
  12. Mix in zest.
  13. Reduce oven to 320 degrees F (165C).
  14. Pour filling over hot crust.
  15. Bake until sides are set and filling no longer moves when pan is shaken, about 20 minutes.
  16. Cool.
  17. Cover and chill atleast 4 hours of overnight.
  18. Lift pastry out of pan using foil as an aid.
  19. Cut into 16 squares.
  20. Cut each square diagonally, forming triangle.
  21. Sift powdered sugar over.
