Sour Cream  Poached Eggs.

Ingredients:

  • 1/2 cup sour cream
  • 2 eggs
  • 1 dash paprika

Directions:

  1. Place sour cream in microwaveable container.
  2. Add chopped green onion.
  3. Make a well in the sour cream and break in 2 eggs.
  4. Cover and microwave at 60% power for 2 1/2 to 3 1/2 minutes, or until whites are cooked.
  5. Sprinkle with paprika and serve on toast.
