Smoked Jalapeno Poppers

Ingredients:

  • 1 cup soy sauce
  • 1 dozen jalapeno peppers
  • 1-8 oz package of softened cream cheese
  • 1 package of thinly sliced bacon
  • 1 tsp paprika
  • 1/4 tsp cayenne
  • 1 tsp pepper
  • 1/2 tsp salt

Directions:

  1. Set the Heat on the Smoker to equate to about 250 degrees
  2. Marinade the Chopped Red and Green Peppers in the mixture of Soy and Brown Sugar for 2 hours.
  3. Cut the stems off of the Jalapenos, slice in 1/2 and seed the peppers.
  4. Mix the softened Cream Cheese and the drained, marinated sweet peppers in a freezer bag and cut a 1/2 portion from the bottom corner of the bag to use as a pastry bag.
  5. Fill the Jalapeno halves with the cream cheese mixture and put the halves back together.
  6. Wrap a 1/2 slice of bacon around the Jalapeno and insert a toothpick into to hold together
  7. Mix your Dry Seasonings together and sprinkle lightly onto the Poppers.
  8. Smoke until the Bacon is done (Approx 2 hours for me)
  9. Please use caution if you are not using indirect heat, the bacon drippings will catch fire.
