Slow Roasted Tomatoes

Ingredients:

  • . 12 - 18 plum tomatoes
  • 2 tbsp sugar

Directions:

  1. Heat the oven to 250°. Line a baking sheet with foil and rub it with a little extra-virgin olive oil.
  2. Arrange 12–18 halved and seeded plum tomatoes on it in a single layer, cut side up.
  3. Drizzle evenly with 1⁄2 cup extra-virgin olive oil, sprinkle with 2 tbsp. sugar, and season with pepper to taste.
  4. Bake the tomatoes until they are still juicy but slightly wrinkled, about 3 hours.
  5. Transfer to a platter to let cool slightly.
  6. Just before serving, sprinkle tomatoes with coarse or fine sea salt and garnish, if you like, with small whole flat-leaf parsley leaves, mint leaves, and slivered basil.
  7. Makes 6 servings.
