Simple Oatmeal Cookies

Ingredients:

  • 2 eggs
  • 1/2 cup white sugar
  • 1 cup oil ( canola or vegetable)
  • 1 tsp vanilla
  • 1 tbsp hot water
  • 2 cups rolled oats
  • 1 3/4 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp cinnamon

Directions:

  1. Preheat oven to 350.
  2. In a large bowl beat eggs until frothy, beat in sugars.
  3. Add oil and vanilla.
  4. Dissolve baking soda in hot water and stir into egg mixture.
  5. In a seperate bowl mix oats, flour, salt and cinnamon.
  6. Stir oats mixture into egg mixture, mix well.
  7. Drop by teaspoons onto greased baking sheet.
  8. Let cool for a few minutes before removing.
  9. Bake for 8 minutes.
