Shrimp And Grits With Bacon

Ingredients:

Directions:

  1. Add butter and olive oil to a saucepan over medium heat.
  2. When butter has melted add the onion and cook until soft.
  3. Add garlic and cook for another minute.
  4. Turn heat to high and pour in the milk and water.
  5. Bring to a boil and slowly whisk in the grits.
  6. Turn heat to medium low and cook, stirring occasionally for 15 to 20 minutes.
  7. When done, dump in the cheese and stir until it melts.
  8. Season with salt and pepper and set aside.
  9. Put bacon in a large skillet set over medium high heat.
  10. Cook until golden brown and crisp.
  11. Drain to paper towels.
  12. Remove all but 3 tablespoons of the oil.
  13. Set skillet back over medium high heat.
  14. When nearly smoking, add shrimp.
  15. Cook until pink, about 1 1/2 minutes per side.
  16. Scoop some of the cheese grits into a bowl.
  17. Top with shrimp, bacon and scallions.
  18. Season to taste with salt and pepper.
