Ingredients:

Directions:

  1. Combine the salt, sherry, and cornstarch; mix well. Add the spareribs and toss to coat then marinate for 30 minutes
  2. Heat oil in a wok or deep pan to 350
  3. Add the spareribs and deep-fry until crisp, stirring to prevent them from sticking together, 5-7 minutes
  4. Remove to a paper towel ~ drain oil
  5. Reset the empty wok (or pan) on medium high heat
  6. Stir in the sauce ingredients and stir to blend
  7. Cook in wok until thickened
  8. Return the pork to the wok and stir until each piece is well coated in the sauce
  9. Serve hot
