Ingredients:

Directions:

  1. Heat a large, covered saucepot of salted water to boiling over high heat.
  2. Add pasta and cook as package directs.
  3. Meanwhile, in large bowl, whish together peanut butter, soy sauce, vinegar, oil, lime juice and crushed red pepper until smooth.
  4. Cut red bell pepper and cucumber into matchstick-thin strips.
  5. Chop cilantro.
  6. Drain pasta.
  7. Rinse with cold water; drain again.
  8. Add pasta, cucumber, red bell pepper and carrots to sauce in bowl; toss to coat.
  9. Sprinkle with cilantro and serve.
