Ingredients:

  • semolina -1cup
  • sugar -1/2 to 3/4 cup,depending on the sweetness you'd like
  • whole milk(full fat )-2-1/2cups
  • cardamom powder-1/4tsp(optional,as not everyone likes the intense flavor,but its a must in almost all indian sweet dishes)
  • cashews halved and roasted in a tsp of ghee-10
  • brown raisins ( kishmish) roasted in a tsp of ghee-6-7(optional)

Directions:

  1. 1.In a skillet heat ghee on a low flame.Be sure to keep the flame low as ghee heats very quickly.
  2. 2.Add the semolina,and saute it till it swells & puffs up and lends off an aroma.this should take abt 3-4 mins.it is important to keep stirring it.
  3. 3.Add hot milk,stirring continuously on a low flame so that lumps dont form.Cover & cook for a minute or two.
  4. 4.Once the mix has thickened and all the milk absorbed,add the sugar and keep stirring till it has dissolved(check the sweetnes.if u feel it could hold some more sugar,add it at this point)
  5. 5.Sprinkle cardamom powder and mix well
  6. 6.Finally garnish with roasted cashews and raisins and serve hot by itself or with hot pooris.
