Seafood - Spinach - Orzo

Ingredients:

Directions:

  1. Saute the fresh spinach in a non-stick medium skillet in 1 T. butter and a little salt and pepper - dont' over cook, it cooks very quickly and I only cook it for a minute or so. Then put the spinach on top of the precooked, warm orzo (follow the box instructions)- place it on an attractive serving plate. Then -
  2. Saute shrimp (or scallops) in 2 T. butter and the garlic and lemon juice. Cook for 5-6 minutes, don't overcook. Top the spinach/orzo with the seafood - sprinkle with the green onion if desired - serve with lemon wedges. Best served immediately.
