Ingredients:

  • 1/2 tbsp basil
  • 1/4 tbsp thyme
  • 1/4 tbsp marjoram
  • 1/2 tsp salt
  • 1/4 tsp pepper

Directions:

  1. Mix sausage with herbs and spices.
  2. Divide into 8 equal portions.
  3. Soft boil the eggs, (about 6 minutes), cool and peel.
  4. Pat meat portions into flat rounds, Place an egg into the center of each and fold the meat around the egg, covering completely.
  5. Brush each with the beaten eggs and roll in the breadcrumbs.
  6. Heat oil to about 350 degrees F.
  7. Fry each egg until meat is medium to dark brown.
