Ingredients:

  • 4 cups rice
  • 1 litre chicken stock
  • 2 tbsp cornflour
  • 3 tbsp curry powder
  • 1 tbsp soy sauce
  • 1 large onion, diced
  • 1 tbsp sugar

Directions:

  1. Dry fry the chicken, maybe adding a spoonful of water to prevent sticking
  2. Add the onions and fry.
  3. Add the curry powder and stir fry until chicken becomes flavoured.
  4. Mix the chicken stock into the cornflour.
  5. Pour over chicken and onions and simmer until thickens.
  6. Add soy sauce, tomato ketchup and sugar.
  7. Cook for 15minutes. Put on rice.
  8. Serve both piping hot.
