Ingredients:

  1. In large skillet, melt 1/4 cup butter. Add onion and green bell pepper and saute until softened. Stir in pimento
  2. Spoon half the onion mixture into bottom of a 1 1/2 quart casserole.
  3. Sprinkle with 1/2 cup Swiss cheese and 1/2 cup cracker crumbs.
  4. Repeat layers of onions and cheese.
  5. In small bowl, whisk together eggs, cream, salt and pepper. Pour over onions in casserole.
  6. Sprinkle with remaining 1/2 cup cracker crumbs and drizzle with 2 tablespoons melted butter.
  7. Bake at 325 degrees for 25 minutes or until set.
  8. Serve hot.
