Scalloped Potatoes For A Crowd

Ingredients:

  • 44 lbs. potatoes
  • 5 tbsp. salt
  • 21/2 gallon. cream sauce
  • 41/2 cup. melted butter or oleo
  • 21/2 gallon. hot milk
  • 6 tbsp. salt
  • 11/2 tbsp. pepper

Directions:

  1. Peel and slice potatoes (season with salt).
  2. Arrange in layers of cream sauce in greased baking pans (alternating potatoes and sauce).
  3. Bake in slow oven, 325°F, until potatoes are tender (approximately 2 hours).
  4. (Onion, cheese, chives or green pepper can be added to sauce.)
  5. If you wish to make this as a main dish you may add 4-8 cups of cubed ham.
  6. Serves 100
