Sausage, Squash, Onion Stir Fry

Ingredients:

  • 1 medium onion
  • 1 tbsp margarine
  • 1 tsp salt (to taste)
  • 1 tsp pepper (to taste)

Directions:

  1. Slice sausage into 1/4 rounds (like disks).
  2. Slice squash width wise (like discs).
  3. Cut Onion into rings.
  4. Microwave onions and squash covered for 3 minutes (or until preferred doneness - this is just to save cook time in the skillet).
  5. Brown sausage in margarine (we like it browned til crispy/crusty on the outside).
  6. Add squash and onions.
  7. Mix well (we like the squash and onions to be caramelized).
  8. Add salt and pepper to taste (the sausage is already salty so salt may not even be needed!).
  9. Serve piping hot! Variation: Serve over fried rice!
