Ingredients:

  • 3 tbsp butter
  • 4 tbsp flour
  • 2 cups water
  • 1/3 cup milk
  • salt and pepper

Directions:

  1. Melt the butter in the saucepan and add flour, making a roux. Cook for 1-2 minutes then add the water. Bring to a boil and cook for 5 more minutes.
  2. Beat the egg yolks and the milk. Combine with the first mixture, beating constantly with a whisk. Season to taste.
  3. Strain the sauce through a very fine sieve or several layers of cheesecloth. Add lemon juice just before serving.
