Sabzi Bhendi (Sauteed Okra With Cumin)

Ingredients:

  • 1 medium onion
  • 3 tbsp ghee (or butter)
  • 1 tsp salt
  • 1 tbsp ground cumin
  • 1/4 tsp black pepper

Directions:

  1. Peel and halve the onion lengthwise, then slice lengthwise into paper-thin slivers.
  2. Heat ghee or butter in a heavy skillet over medium heat.
  3. Add onions and salt.
  4. Cook, stirring, until golden-brown, about 7-8 minutes.
  5. Add okra, cumin and pepper.
  6. Cook, lifting and turning vegetables, until okra is tender and most of the liquid has evaporated, about 25 minutes.
  7. If frozen okra is used, it will be a bit sticky.
