Directions:

  1. Preheat oven to 300'
  2. Put cooling rack over baking sheet. Slice tomatoes,horizontally,into thirds and arrange slices on rack. Put top and bottom of tomatoes cut side up on rack.
  3. Dress tomatoes with oil,salt,pepper and thyme leaves. Roast 1 hour .
  4. Remove tomatoes to a serving platter.
