Rice with Pine Nuts and Cilantro

Ingredients:

  • 2 tbsp pine nuts
  • 3 cups packed fresh cilantro sprigs
  • 1 garlic clove
  • 3/4 cup long- grain white rice
  • 1 1/2 tbsp olive oil
  • 1 1/2 cups water
  • 1/2 tsp salt

Directions:

  1. In a dry small heavy saucepan toast pine nuts over moderate heat, stirring, until golden, about 5 minutes, and transfer to a small bowl. Finely chop cilantro and reserve 1/4 cup for garnish. Mince garlic. In pan cook rice in oil with garlic and remaining cilantro over moderate heat, stirring, 3 minutes and add water and salt. Bring mixture to a boil and cook, covered, over low heat 15 minutes, or until water is absorbed and rice is tender. Remove pan from heat and let rice stand, covered, 5 minutes.
  2. Serve rice sprinkled with pine nuts and reserved cilantro.
