Ingredients:

  • 3/4 cup minute rice
  • 2 3/4 cups milk
  • 1/3 cup sugar
  • 1 tbsp butter
  • 1/2 tsp salt
  • 1/2 tsp vanilla
  • 1/4 tsp nutmeg

Directions:

  1. Combine Minute Rice, milk, sugar, butter, salt, vanilla and nutmeg in a greased 1 Quart baking dish. (I added my almonds and cardamom pods here.)
  2. Bake in a 350 degree oven for 1 hour.
  3. Stir after 15 minutes and again when pudding is done.
  4. Then sprinkle with cinnamon/sugar.
  5. Serve warm or chilled.
  6. The pudding will thicken as it stands.
