Ingredients:

Directions:

  1. Cut Zucchini about 1/8th inch thick (a slicer really helps).
  2. Heat 1 TBS olive oil in pan. Add half the Zucchini and heat through about 5 mins add salt and pepper to taste. Remove to plate.
  3. Repeat with other half of Zucchini.
  4. Put the first half of Zucchini back in pan and add Tarragon and lemon juice. Toss to combine.
