Rhubarb Oatmeal Bars

Ingredients:

  • crust
  • 1/2 cup chopped nuts
  • 1 1/2 cups rolled oats
  • 1/4 tsp salt
  • 1 1/2 cups flour
  • 1 cup butter or shortening
  • 1/4 tsp baking soda
  • filling
  • 1 1/2 cups sugar
  • 2 tbsp cornstarch
  • 1/4 cup water
  • 1 tsp vanilla

Directions:

  1. Combine all ingredients for crust and mix until crumbly. Pat half of the mixture into a 13x9x2-inch baking pan.
  2. To Prepare Filing: combine rhubarb, sugar, cornstarch and water in a medium saucepan and bring to a boil; reduce heat to low and continue to cook, stirring frequently, until mixture is clear. Stir in vanilla.
  3. Pour filling over crust. Sprinkle with the remaining crumb mixture. Bake for 20 minutes at 350°. Allow to cool before cutting into serving sized bars.
