Ingredients:

  • 2 1/2 cups of dry pinto beans (about 1 lb or 450g)
  • 3 quarts of water
  • 1/2 cup chopped onion (optional)
  • 1/4 cup water

Directions:

  1. Clean the dried beans and rinse.
  2. Put in a pan with the 3 quarts of water.
  3. Bring to a boil, and boil for 2 1/2 hours until beans are soft and skin begins to crack.
  4. Strain water off of beans.
  5. In a skillet saute onions until tranlucent.
  6. Add beans and mash
  7. Add smart balance spread
  8. Add water as needed to keep beans from drying out.
