Quick Homemade Tomato Soup

Ingredients:

  • 1 medium diced onion
  • 1 tsp corn oil
  • 1 (27 oz) can diced tomatoes
  • 3/4 cup water
  • 1/2 tbsp brown sugar
  • 1 tsp salt

Directions:

  1. Heat oil in soup pot over medium heat.
  2. Add onion and allow to sweat for 5-6 minutes.
  3. Add can of tomatoes, water, brown sugar, salt and pepper.
  4. Check for personal taste on salt and pepper and add more if you wish.
  5. Bring to boil and turn down.
  6. ** At this time I use my immersion blender to puree the soup a bit. If you don't have one, you can pop it in your regular blender, of if you like it chunky, do not do this step**.
  7. Allow to simmer for 5 minutes.
  8. Garnish with sour cream, chives or croutons.
