Quick Blueberry Brunch Cake

Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1/2 tsp salt
  • 3/4 cup sugar
  • 3/4 cup milk
  • 1 egg
  • 1 tsp vanilla
  • 1 1/2 cups fresh blueberries
  • 1/4 cup flour
  • 1/4 cup butter
  • 1/4 cup brown sugar

Directions:

  1. Sift all dry ingredients; set aside.
  2. Cream butter and sugar; beat in egg, milk, vanilla and add to dry ingredients.
  3. Mix with a fork gently (like a muffin batter); do not over mix.
  4. Grease an 8 square baking pan; add 1/2 of the batter.
  5. Add blueberries (if using frozen blueberries, thaw and drain liquid before incorporating into batter).
  6. Top with remaining batter.
  7. Sprinkle on topping.
  8. Preheat oven to 375 degrees and bake 35- 40 minutes or until cake tester comes out clean.
  9. Cool and dust with powdered sugar.
