Ingredients:

  • 1 cup oil
  • 3 cups sugar
  • 3 tsp vanilla
  • 5 cups flour
  • 2 tsp nutmeg
  • 2 tsp cinnamon
  • 1 tsp allspice
  • 1/4 tsp ginger
  • 1 3/4 tsp salt
  • 1 (29 oz) can solid- pack pumpkin

Directions:

  1. Pre-heat oven to 350°F
  2. Beat oil and sugar in mixing bowl. Add eggs and vanilla, beating well.
  3. Sift flour, baking powder, baking soda, spices, and salt together. Add to sugar mixture alternately with pumpkin, beating well after each addition.
  4. Fold in chocolate chips .
  5. Drop by teaspoonfuls onto greased cookie sheets.
  6. Bake for 10 to 12 minutes or until golden brown.
  7. Cool on wire rack.
