Ingredients:

  • 3 (8 oz) packages of cream cheese
  • 1 cup. of canned pumpkin
  • 1 1/2 cup. of graham cracker crumbs
  • 5 tbsp. of butter, melted
  • 1 cup. of sugar , plus
  • 1 tbsp. of sugar
  • 1 tsp. of vanilla
  • 3 eggs
  • 1/2 tsp. of cinnamon
  • 1/4 tsp. of nutmeg
  • 1/4 tsp. of allspice
  • whipped cream

Directions:

  1. First you want to preheat oven to 350 degrees.
  2. Next you want to combine the graham crust and melted butter with 1 tbsp of sugar in a bowl.
  3. Mix this well, so all graham is doused in butter.
  4. Then foil the outside of the 8 in. pan.
  5. Next press crumbs in the bottom and aroud the sides of the pan.
  6. Bake this crust approx. 5 min.
  7. Now you want to take a large bowl and add in it the cream, cheese, 1 c. sugar, and vanilla.
  8. Then you can mix with blender until smooth.
  9. Next add in the pumpkin, eggs, cinnamon, nutmeg, and the allspice and keep beating until smooth.
  10. Now you want to pour into the graham crust.
  11. Bake approx. 60-70 min.
  12. Note that the top will get brown.
  13. Take out and let cheesecake cool.
  14. Chill cheesecake.
  15. When cool add whipped cream and serve.
