Proper British Roast Potatoes

Ingredients:

  • 1 -1 1/2 lb king edward potato
  • 1 tsp salt
  • 100 g lard (or vegetable oil)
  • 2 liters water

Directions:

  1. Preheat oven to 220°C (430°F).
  2. Place lard or oil in roasting tin and put in middle rack of oven.
  3. Boil Kettle.
  4. Peel potatoes.
  5. Chop into quarters (approx 4 cm cubes).
  6. Par Boil potatoes for 10 minutes with salt.
  7. Drain potatoes in a colander.
  8. Shake potatoes until edges are furry (approx 15 seconds).
  9. Remove roasting tin from oven.
  10. Carefully place potatoes into hot fat of roasting tin; WARNING, This step is requires caution as fat is at 220°C.
  11. Place roasting tin, with potatoes back in the oven and cook for 35-45 minutes depending on the size of your potato pieces.
  12. After 20 minutes turn the potatoes so browning occurs on a different side.
  13. Potatoes should be crispy on the outside and fluffy in the middle.
